If you love the bright taste of grapefruit and want to enjoy it with some floral gin then this sous vide grapefruit gimlet is exactly what you are looking for. It is a simple to make but complex tasting cocktail that combines a sous vide grapefruit cordial with some gin and is served over ice. The cordial packs a huge citrus punch that makes this drink leap out of the glass.

Sous Vide Grapefruit Gimlet Recipe

  • Cooks: 135°F (57°C) for 2 hours
  • Serves: 1 cocktail

Ingredients for Sous Vide Grapefruit Gimlet

  • For the Sous Vide Grapefruit Cordial

  • 250g Fresh Grapefruit juice (9 ounces)
  • 250g Sugar (9 ounces)
  • 2.5g Citric acid (0.1 ounce)
  • 10g Grapefruit zest, microplane preferred (0.35 ounce)
  • For the Sous Vide Grapefruit Gimlet

  • 2 oz Citrus-forward gin
  • 1 oz Grapefruit cordial
  • Ice, as needed

Cooking Instructions for Sous Vide Grapefruit Gimlet

For the Sous Vide Grapefruit Cordial

1. Combine all of the ingredients in a sous vide bag.

2. Vacuum seal and cook sous vide at 57°C for 2 hours.

3. Chill completely in an ice bath.

4. Strain the zest from the cordial and reserve in the fridge.

For the Sous Vide Grapefruit Gimlet

1. Combine the ingredients in a cocktail shaker and shake with ice.

2. Double strain into a chilled coupe glass.
